My name is Thomas Anastasio, my friends call me Tom Anastasio. Although I was born and raised in Perth Amboy, and New Jersey will always be my home base, I have been fortunate enough to have a career as a professional chef that has taken me from the rural villages of Japan to the peaks of the French Alps, pursuing my dual passions of great food and world traveling.

My journey began at Brookdale’s Culinary Arts training program, where I learned the essentials of food preparation. From there, I took prep chef jobs at several restaurants on the Jersey Shore, and my hometown of Perth Amboy. With a few years of training and experience under my belt, I was ready to fulfill my lifelong goal of seeing the world.

My culinary travels took me all over Europe and Asia. I never stayed in the same place for very long, as there was always a new place to explore, and a new type of cuisine to master. I honed my skills working at restaurants in Spain, Portugal, France, Greece, Thailand, and Japan, first as a sous chef and then as a head chef. The adventures I had on my travels could fill several books (and soon will, thanks to a recent deal I am not yet able to discuss in detail.)

Eventually, I decided it was time to return home and settle down. I now live in Perth Amboy, NJ and work as a personal chef to various private clients in Rumson and Colts Neck. I still seek out exciting new places to vacation, and always enjoy trying interesting new restaurants.

On this blog, I will share some thoughts on places I have been, food I have tried, and more. Hopefully you will find it interesting, and maybe even inspire you to see out new culinary adventures of your own.
